Here I am sharing open butter masala dosa recipe.If you are a dosa lover and want to try dosa varieties then add this to your list. If you are planning to prepare dosa batter or left with dosa batter, once give a try. This dosa tastes amazing with stuffing on the top of it of course butter also.

This recipe is basically street food in Bangalore and also served in hotels. In Bangalore it is served in the mornings for breakfasts. But can be prepared for dinners.

Specialty of this dosa is, after spreading masala powder, curry etc., dosa is not folded into half. It is served as it is. That means stuffing is on the top of the dosa rather than inside. Another version of this dosa is butter dosa or benne dosa. It is just a plain dosa with butter on top of it. But here in this recipe along with butter there is stuffing also which is normally served with dosa like potato curry, coconut chutney along with fresh coconut and some grated carrot.

Ingredients

For masala powder

  • Urad dal — 3 Tbsp
  • Chana dal — 3 Tbsp
  • Coriander seeds — 3 Tbsp
  • Roasted chana dal — 3Tbsp
  • Cinnamon — 1/2 inch
  • Cloves — 3
  • Turmeric — 1/4 Tsp
  • Dry coconut — 2 Tbsp
  • Peanuts — 3 Tbsp
  • Salt — 1/2 Tsp
  • Red chilies — 8 or to taste

I used 3 Guntur red chilies and 5 Byadgiri red chilies.

For potato curry

  • Potatoes — 4
  • Oil — 3 Tsp
  • Mustard seeds — 1/2 Tsp
  • Urad dal — 1 Tsp
  • Chana dal — 1 Tsp
  • Curry leaves — few
  • Green chilies — 2 slit
  • Onions — 1 medium
  • Turmeric — 1/4 Tsp
  • Salt — 1/2 Tsp or to taste
  • Coriander — 2 Tbsp

For coconut chutney

  • Coconut — 1 cup
  • Roasted chana dal — 3 Tbsp
  • Green chilies — 2 or to taste
  • Curry leaves — 2 Tbsp
  • Coriander — 3 Tbsp
  • Salt — 1/2 Tsp
  • Tamarind pulp — 1/2 Tsp

Other ingredients

  • Grated carrots
  • Fresh coconut
  • Butter

Steps to make open butter dosa

Before making dosa, keep potato curry and chutney ready.

  • For masala powder dry roast all ingredients except turmeric, dry coconut, roasted chana dal and salt
  • Grind them into fine powder adding into mixer jar.
  • For potato curry, Add oil into kadai, then add mustard seeds, urad dal, chana dal and fry them.
  • Then add curry leaves, green chilies and again fry. Then add onions and turmeric and fry until translucent.
  • Now add boiled and mashed potatoes and salt and finally coriander and mix well.
  • For coconut chutney, add all ingredients mentioned above under chutney’s ingredients and grind into fine paste.
  • For tempering — Oil, mustard seeds, urad dal and hing. Fry them well and add to chutney. Give good mix.
  • Now pour dosa batter on hot tawa(don’t spread thin) spread little. On top add butter generously and roast half.
  • Then flip dosa to another side and roast for a minute.
  • Flipping dosa to first side, from top spread prepared masala powder, potato curry, coconut chutney, grated carrot, fresh coconut and finally butter.
  • Now serve this delicious open butter dosa hot. By the time we spread all prepared curries dosa gets cooked well from bottom.
