Sambar powder is an Indian spice mix powder which is used to prepare different sambar recipes. It is aromatic, flavorful spice powder. South Indians prepare this spice mix and store in air tight containers. I personally like to prepare at home rather than buying from store. Once prepared, it can be used whenever we make sambar recipes. I usually prepare this powder which is sufficient for a month and store in air tight container.
Sambar is usually prepared with lentils and vegetables of our choice. Sambar can be accompanied with breakfasts also like idli, vada, dosa, pongal.
Spices can be dry roasted or little oil can be used to roast. Before making any spice mix powder keep all ingredients ready and then start roasting them. This makes our work easy. And also roast every spice separately so that they roast evenly without getting charred.

Ingredients
- Coriander seeds — 1 and half cup
- Urad dal 1/4 cup
- Chana dal — 1/4 cup
- Mustard seeds — 3 Tsp
- Fenugreek seeds — 1 and half Tsp
- Cinnamon — 1 inch
- Cardamom peels — 4 number
- Cloves — 8 no.
- Turmeric — 1/2 Tsp
- Byadagiri chillies — 10
- Guntur chillies — 20
- Dry coconut — 1/3 Cup
- Hing — 1/2 Tsp
- Black pepper — 3 Tsp
- Poppy seeds — 1 Tsp
- Black stone flower — 1 Tsp
Procedure
Dry roast all ingredients and cool them completely. Then grind them into fine powder. Store in air tight container. While storing in container do tap and shake the jar so that powder settles down while filling.
Make sure to put lid tightly for the jar. You can use this sambar powder whenever you make sambar recipes.
Points to remember
- Dry roast spices separately so that they roast evenly.
- While roasting red chilies you can add little oil.
- After grinding cool powder completely and then store in jar.
- Close the lid and store in room temperature.
